A qualitative assessment of the microbiological risk associated with oysters (Crassostrea rhizophorae) intended for human consumption was conducted in the bays of Cabañas and Honda, in the northwestern region of Cuba. The study was based on the analysis of microbiological results from farming water, fresh oysters, and processed oyster meat, obtained from sampling conducted in 2024 and 2025, as well as additional information collected through surveys of farmers, processors, and consumers. Fresh oysters harvested in Cabañas Bay were processed at the Cabañas industry, whereas oysters from Honda Bay were processed at the Morrillo industry. The risk assessment considered the likelihood of exceeding established microbiological limits and the severity of health damage associated with the identified hazards. Environmental, seasonal and operational factors influencing product contamination were also analysed. The main hazards identified were related to indicator bacteria associated with faecal contamination, especially thermotolerant coliforms and Escherichia coli, with a greater impact during processing. The evaluation helped identify critical factors throughout the production chain and practices associated with higher risk levels. Based on the results, actions to manage microbiological risk were proposed, and a training workshop was designed as a risk communication tool.
